Caffè Santos is one of Luxardo's top pastry aromas. It is a coffee aroma distinguished by the high aromatic yield obtained thanks to a special balanced blend of Arabian coffees that prevent the woody and acidic aftertaste of the “robusta” varieties.
The aroma extract process from roasted and ground coffee beans requires a hot infusion procedure. Two days are needed to satisfactorily extract the aromatic characteristics from the coffee. After a series of additional steps, the infusion is brought to 40° alcohol content for a perfect balance between aroma and flavour.
Luxardo Caffè Santos emanates the authentic aroma of espresso coffee and, thanks to its high concentration, it can be highly diluted, combining practicality and economy, much better than dried coffee solutions. The slight alcohol content of the soak prevent sponge cake from hardening and gives the pastry or ice-cream a persistent rounded aroma, without woody or acidic aftertastes, emanating the fragrance of coffee even days later.
Ideal for soaking sponge cake bases in traditional cakes (and is especially indicated for Tiramisù), Caffè Santos can also be used as a flavouring in ganaches and to fill sophisticated chocolate pralines.
